Name: Patatas Bravas
Ingredients: A splash of olive oil; 900g floury potatoes, peeled and cut into bite-sized chunks; Flaky sea salt; 3 tbsp olive oil; 1 onion, finely chopped; 2 cloves of garlic, crushed; 1 red chilli, blackened on the EGG and chopped; 400g chopped tomatoes; 1 tsp smoked pimenton; 1 tbsp sherry vinegar; A pinch of sugar; Sea salt and freshly ground black pepper; Yolk of 1 free-range egg; ½ tsp white wine vinegar; 75ml vegetable oil; 75ml olive oil; 1 clove of garlic; Lemon juice, to taste
